Have a taste of RISE AND DINE CANADA (SECOND EDITION)
Breakfast in One (Linden House B&B)
"For vegetarians, simply omit the bacon or ham." —Elaine Landray
6 slices bread
6 teaspoons butter
1 cup grated Gruyère or Emmental cheese
1 cup cooked chopped ham or crumbled bacon
6 eggs
Salt and pepper
6 teaspoons whipping cream
Preheat the oven to 375°F.
Cut the crusts from 6 slices of bread. Roll with a rolling pin. Butter both sides and press each slice into a 6-cup muffin pan (a Texas muffin pan works best).
Bake for 15 minutes.
Reduce the oven to 350°F. Put the grated cheeses in the bottoms of toast cups (saving some for topping). Sprinkle ham or bacon over the cheese.
Break an egg carefully into each cup, add salt and pepper, a dot of butter, and about 1 teaspoon of cream to each, then top with more grated cheese.
Bake 18 – 20 minutes.
Yield: 6 servings.
