    Have a taste of RISE AND DINE AMERICA (SECOND EDITION)

    Best Ever Chocolate Chip–Banana Muffins (The Signal House)

    3 large ripe bananas
    3/4 cup sugar
    1 egg, lightly beaten 
    1/3 cup butter, melted
    1-1/2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    6 ounces chocolate chips

    Preheat the oven to 375°F.

    Mash the bananas, and add the sugar and egg. Add the melted butter, then add the flour, baking soda, baking powder, and salt. Stir in the chocolate chips.

    Pour the batter into a greased 12-cup muffin pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean.

    Yield: 12 muffins

    Located just one hour east of Cincinnati, this stately and historic 1830s home on the Ohio River offers spectacular sunsets from three relaxing porches and elegant twin parlors, with river views from every room. Two Civil War officers lived in this house and legend has it that it was also part of the Underground Railroad. Steeped in a rich past, the village of Ripley includes 55 acres that are recorded in the National Register of Historic Places. Visit antique and specialty shops, restaurants, three museums (themed on the early pioneers and the Underground Railroad), covered bridges, and lots of friendly people. The beautiful Ohio River offers boating, fishing, and water and jet skiing, with pick-up service from local marinas provided by The Signal House. Your hosts Betsy and Vic enjoy their B&B guests, family, grandchildren, river sports, and life in general! Vic is a letter carrier for the US Postal Service and Betsy is a former dental assistant and business telephone trainer. A full homemade breakfast is served at guests’ preferred time.
